Bacalhau
Bacalhau is the Portuguese name for cod, in this case, the fish that is dried and salted. In contrast to the other former trading posts of Portugal like Goa and Angola, the bacalhau in Macau is used as a basic seasoning for many local dishes. Indeed, it is part of salads and fried fish cakes. Its versatile flavor lends to its popularity and longevity. No wonder it has been part of Macanese cuisine for over 500 years.
The basic serving of bacalhau includes dried cod fish with potatoes and parsley. The popular variations of the dish developed over the years are the Bacalhau com todos and Bacalhau a bras. |
