Bebek & Ayam Betutu
Don’t let the name of this dish intimidate you. Ayam and bebek betutu – also known as one of the most popular Balinese dishes – is steamed chicken (ayam) and duck (bebek) cooked in betutu sauce.
Although several regions in Indonesia have their own famous versions of this dish, the Balinese take on ayam and bebek betutu can be distinguished by the hearty combination of sweet and spicy flavours. The chicken and duck meat are carefully coated with the famous betutu paste – a concoction of turmeric, garlic, shallots, candlenuts, peanuts, shrimp paste and chilli finely ground and sauteed in coconut oil. There’s no denying that the flavours in this dish are not for those who prefer lighter flavours. If you’re not a big fan of spice, you can always ask for the non-spicy alternative. Ayam and bebek betutu is an iconic dish- you can order it from both warongs and high-end restaurants. |
